Zesty Grilled Chicken (Herbs)
Makes 8 servings
- 1/2 c olive or canola oil
- 1/2 c soy sauce
- 4 Tbsp lemon juice
- 3 Tbsp brown sugar
- 4 cloves garlic, minced
- 1 Tbsp whole cloves
- 1 tsp ground black pepper
- 1/4 c minced fresh thyme
- 1/4 c minced fresh basil
- 8 boneless, skinless chicken breast halves
- Place oil, soy sauce, juice, sugar, garlic, cloves, pepper, thyme and basil in large zipper lock plastic bag. Seal and turn to mix ingredients.
- Add chicken to bag. Seal and refrigerate 4 - 24 hours, turning bag often to distribute marinade. When ready to cook, place chicken in a bowl and place marinade in saucepan. Boil marinade 2 minutes.
- Grill, cover closed, over medium coals, basting often with boiled marinade, until juices run clear, about 10 minutes per side when grilled 4 inches from coals.
